Mandarin oranges, raisins, shave gruyere cheese and almonds
atop mixed greens with a Raspberry vinaigrette

Calamari Salad
Crispy fried calamari, cherry tomatoes and goat cheese over arugula
with a Citrus vinaigrette

Grilled Asparagus and Fava Beans
With sautéed tomatoes, feta cheese, olive oil and balsamic drizzle

Vegetable Napoleon
Grilled zucchini, squash and eggplant layered with Herb cheeses, finished with
olive oil and balsamic reduction

Second Course:  Entrèe
(choice of one)
Aged N.Y. Strip
Grilled N.Y. Strip topped with a pearl onion demi, served with crispy plantain
chips and Chef's vegetables

Bacon Wrapped Stuffed Trout
A whole trout stuffed with sautéed spinach and sundried tomatoes wrapped in applewood
smoked bacon accompanied by smoke Gouda risotto and vegetables

Pistachio Dusted Rack of Lamb
New Zealand "Lolly Pop" Lamb encrusted in pistachios, served with
fresh mint mashed potatoes and chef's vegetables

Chicken Milanese
Tender chicken breast topped with prosciutto, spinach and fresh mozzarella, finished in a
sundried tomato cream sauce and served with mashed potatoes and Chef's vegetables
